They confirmed what I already knew. She has an allergy to berries. I gave her some and she got hives all over. Not as dramatic as the egg episode, but still an allergy. Luckily she tested negative to soy, wheat and dairy allergies. We will be avoiding nuts in all forms though. Easter is coming up and I have been thinking of ways to make it special for her. I know she is young, but I still want her to bee able to participate. Plus if I get things figured out now then I wont have to stress about what I will do when she is older. I will post later with recipes and pictures.

My crazy month!!

My life is finally calming down. This month has been crazy. We moved to a new apartment, which my daughter loves. There is so much room for her to practice her new walking skills. Also I just had her first birthday party. It was such a success. The only bad thing was we had to change parks at the last minute. I made her egg free carrot cake, ice cream, and sugar cookies.

We are taking her to the allergist tomorrow for more tests. She is still having some issues. I hope there aren't more allergies.

I made a cake last night for my dads birthday. It came out really well and the babies loved it. Here is the recipe and substitutions for different flavors.

Chocolate Cake

Ingredients
1 ½ cup flour
3tbsp cocoa powder
1 cup sugar
1 tsp baking soda
½ tsp salt
1 tbsp vinegar
5 tbsp oil
1 tsp vanilla
1 cup water

Instructions
Preheat oven to 350. Combine dry ingredients in a mixing bowl. Mix wet ingredients in a separate bowl. Add wet ingredients to dry ingredients and mix until you get a smooth batter. Do not beat. Pour into greased and floured pan (8 inch square or 9 inch round) or 12 cupcakes. Bake in oven until cake or cupcakes test done—about 35 minutes for cake or about 20 minutes for cupcakes.

Substitutions
Vanilla- omit cocoa. Double amount of vanilla.
Spice- omit cocoa. Add 1 tbsp of pumpkin pie spice.
Orange- omit cocoa and vinegar. Substitute orange juice for the water.
Lemon- omit cocoa. Substitute lemon juice for vinegar. Add some lemon extract if desired.

A new way of life

On December 5, 2009 I decided to give my daughter some scrambled eggs. I was excited to give her the little mini omelet that I made. She took a few bites and didn't really seem to want it. Then a few minutes after starting breakfast she vomited all over her high chair tray several times. I took her shirt off to clean her up, but I noticed that she was covered in hives. I also noticed that she was drooling, coughing, and gasping for air. I called the nurse line since it was a Saturday and as soon as the nurse heard Devyn over the phone she told me to hang up a call 911!! The ambulance came and they gave her a shot and took her to Childrens Hospital where she was observed and given lots of Benadryl. That was probably the scariest day of my life. Since then she has gone to the allergist and we found out that she has a severe allergy to egg. We carry an epi-pen jr. and read labels like crazy people. I don't trust restaurant food so it is hard to go out.

She also has eczema, which I now know is a sign for allergies. No one told me that they usually have babies with eczema wait longer to try certain foods.

Luckily I love to cook and bake. I have acquired some new egg free cook books and I am trying things out. It has been a hard adjustment, but it has also been fun. In this blog I plan to share my mistakes and my triumphs. I also plan to share advice and tips that I pick up along the way. This is a learning experience for me so this will be a place that I can share and vent. If no one reads this then it is therapeutic, If someone does read this I hope they get something useful out of it.
